Under-rated and often ignored, both endive and escarole deserve a place of honour in any salad lovers garden. One pkt sows approx. 6 m (20') of row.
Culture: Grows well in a sunny site with light, well drained soil. Sow seed 6 mm (1/4") deep in June in rows 60 cm (24") apart. After germination, thin to 20 cm (8") apart within the row. To promote tenderness and to discourage bitterness, blanche the inner leaves by tying the larger outer leaves up over the centre about 7 to 10 days before harvesting - make sure the leaves are dry before doing this. Cover the top of the plant with a tile, plate or piece of cardboard to keep moisture out of the centre.
