How To Grow 400 seeds/gram In Zones 5 to 8, start seed directly outdoors in a sunny area early September or mid-spring. In lower hardiness zones, sow seed directly outdoors in mid-spring. Sow seed 3mm (1/8") deep and 2.5 cm (1") apart then thin to 15 cm (6") apart. Occasionally caraway will self-sow and establish persistent stands in mild climates. Autumn sown seeds produce overwintering mature plants. Fruit loaded with seed ripens in the following August. When the fruit ripens, harvest entire plant. Dry in the sun, protect from moisture. Caraway seeds are separated from dried fruit by beating dried flower heads.
