Originating from Persia, this leafy green is a member of the amaranth family and is prized for being loaded with antioxidants and nutrients. It is a quintessential cool-season crop, best grown in spring and fall. For summer heat, consider the more resistant New Zealand Spinach.

Growing Essentials: Sow seeds 12 mm deep and 2.5 cm apart in rows 30–45 cm apart. Start as soon as the soil can be worked in the spring, and continue sowing every two weeks until late spring.

Thinning & Feeding: Thin seedlings to 5–7.5 cm after germination—this is the secret to a bumper crop. Top-dress with compost once seedlings are well established.

Succession & Wintering: Sow again in mid-to-late August for a fall harvest. For an ultra-early spring treat, sow ‘Long Standing Bloomsdale’ very late in the fall and cover with mulch to overwinter.

Harvesting: Begin picking the young leaves early in the season to enjoy them at their prime.
