Brussels sprouts are a long-season crop that rewards the patient gardener with incredibly sweet, nutty flavour, especially after a touch of light frost. Heirloom varieties are prized for their exceptional taste and consistent, compact yields.

  • Growing Essentials: These plants thrive in cool weather and fertile, well-drained, slightly alkaline soil. They prefer full sun and require plenty of space to develop their dense, productive stalks.

  • Sowing: Start indoors 8–10 weeks before your planned fall harvest date. Transplant outdoors once the weather cools in late summer, as they mature best during the crisp days of autumn.

  • Care: Keep plants well-watered and deeply mulched to protect the soil. As the sprouts begin to form, “top” the plant—cut off the terminal growing point—about a month before harvest to encourage the remaining sprouts to swell and mature evenly.

  • Harvesting: Begin picking sprouts from the bottom of the stalk upward as they reach the size of a walnut. The flavour is significantly enhanced after they have been exposed to a light frost, which converts starches into sugars.
