Heirloom beets offer a delicious spectrum of colours—from deep, regal purples to vibrant golden yellows and striped varieties—that bring character and exceptional sweetness to the table. These time-tested cultivars are prized for their tender texture and robust flavour, both in their roots and their nutritious, edible greens.

  • Growing Essentials: Beets are cool-weather lovers that thrive in deep, loose, stone-free soil. They perform best in full sun and prefer steady moisture to develop smooth, sweet roots.

  • Sowing: Direct sow in early spring as soon as the ground can be worked, and again in mid-summer for a fall harvest. Space seeds 5–10 cm apart to give bulbs plenty of room to expand.

  • Care: Keep the soil evenly moist and well-weeded. Because beet “seeds” are actually clusters of multiple embryos, be sure to thin seedlings once they reach a few centimetres in height to prevent overcrowding.

  • Harvesting: Pull when roots are small and tender for the best eating quality. Don’t discard the tops—they are delicious sautéed just like Swiss chard or spinach!
